Lazy Cabbage Roll Casserole Recipe
Just like grandma used to make - Well maybe not quite. Cabbage rolls were pretty much a standard meal when company visited my Grandmother's house. My grandma was an amazing cook and could always find the time to prepare the most scrumptious meals and desserts. Those days almost seem like a thing of the past but we can still have the same great flavour in our meals just like she prepared back then.
8 cups of uncooked rice (precooked)
3 lbs of hamburger (precooked)
1 lb of bacon (precooked)
1 whole bunch of celery (sauteed)1 large onion (sauteed)
1 whole head of cabbage chopped into pieces
2 large cans (680 mL each) tomato sauce
Spices - in no particular order:
seasoning salt,
garlic powder,
pepper,
Italian seasoning.
INSTRUCTIONS:
1. Cook your rice, brown your hamburger, and crisp up your bacon
2. Use your bacon grease to saute your celery and onions (this will enhance the flavour in your stew immensely!)
3. Add all of the your ingredients into your large roaster and turn it on to slow cook. Allow this to simmer for 4-6 hours (or more if so desired) and you will have one amazing meal.
This meal can be made in sections or at different time intervals as your day allows. When I made mine, my rice was leftover from a dinner 2 days prior and was brought out of the fridge and added to the rest of my ingredients to create this meal. Even so I had enough to feed my family of 5 plus put 3 big containers in the freezer for an easy dinner at a later date. (Did I mention that I love make ahead freezer meals?)
Nothing says love like good food in the tummy and my grandmom was a testament to that fact. I guess creating great tasting large size meals is a tradition in our family because I now seem to cook for my family much in the same way that she did. I guess all those many weekend at her house rubbed off on me.
